Grape Varieties Palomino

A varietal Palomino from Raul's small parcel of the Pastrana pago, on some of the best and purest Albariza chalk, just south of Sanlucar de Barrameda. The wine is lightly whole-bunch pressed for freshness of juice and retained acidity. It is fermented and aged in french oak casks with ullage wher flor can develop. Only around 500 bottles are produced each vintage.

Bright, lifted and energetic. Intensity and concentration of fruit aromatics are harmonised with elegant and subtle complexity. Stone fruit, white florals, and citrus oil, alongside salinity, flinty minerality, chalky texture and light oak. It's precise, linear and taut. A very fine wine to rival top Burgundy!
