Grape Varieties: Hondarribi Zuri
The K5, the wine in the original dream, where it all started. Seafood wine 'par excellence', born of an ideal to make the ifnest, gastronoic wine of the region. The result, quite different to other Txakoli, a fine wine of intensity, structure, and hormony, made for food.
100% estate fruit from the winery's finest vineyards. Harvested and vinified by plot, allowing for maximum selection of quality at every step. Pre-fermentation cold maceration at 16 degrees for 8 hours. and then only 100% free run juice goes into the fermention. 11 months ageing on fine lees with only minimal sulphite addition before bottling. A masterclass of precision winemaking.
A bone-dry and intense white wine which always clearly exhibits the influneces of the vintage, terroir, and the unmistakable Hondarribi Zuri grape. Citrus core of intense lemon and lime zest and oil. Fleshy stone fruit pad out the mid-palate, around a textural acidic structure. Floral and herb notes of bergamot alongside flinty and saline minerality. Intense flavour and texture through the palate, it's mouthifilling, enrgising, and persistent. Incredible when youthful, remarkable when aged. The best vintages will cellar for 20+ years!
