Grape Varieties: Hondarribi Zuri
Surprisingly, due to the everyday style of Txakoli being 'spritzy', there isn't a lot of sparkling wine made in the region. However, K5 realised the potenital of their indigenous grape and decided to give it a try.
They have used only grapes from one of their older vineyards, Soroberri, as it is more Westerly than others (most being North-facing), and with poorer organic material in the soils, and so ripens a little earlier. This actually mean they can harvest a little earlier and still get great fruit ripeness but also the acidity needed for a sparkling wine - Not that difficult with Hondarribi Zuri!
This wine employs the 'elaboracion ancestral' method for making sparkling wine. A little like for a Pet-Nat, but although the primary fermentation finishes in bottle, they do a disgorgment after a short ageing in bottle, meaning the wine is clear and crisp. All processes for this wine are done by hand, and they had to do the transer to bottle at 2 a.m. to get the right amount of fizz in the final wine!
