From a single plot in Alijo, at high altitude (650m), north of the river. Pedro lets this variety shine, with its crisp citrus and green apple fruit, a hint of fleshy white stone fruit, and plenty of herbaceous, flinty minerality. Spontaneous fermention and ageing in a 300L, old oak barrel, with a bit of battonage. Crisp acidity and structure is balanced beautifully with a touch of lees and mild oxidative richness. A very long, pithy finish makes it a sommelier's dream.
